That's exactly why you are biased. You don't know how's the grass on other side of the fence. You can make small sales, sure, but items you mentioned are not money making machines you think they are. For example, just a few days ago I tried crafting a sapphire set. Right off the bat I failed plate legs 4 times in a row. Think about the amount of money gone down the drain. You are just better off selling the ingots you have if money is what you are after.
To be honest, there is no point in having adaman or sapphire set except if you are a person who likes to sit on top of bank and sport his armor for newbies or you are a perfectionist dueler. It's a lot easier to craft exceptional set of oceanic or daemon steel and use that for dueling. Only a few less AR than exceptional sapphire or adaman and many times cheaper and easier to get.
Crafted weapons, who the hell uses them? There is no point to run around ganking with a weapon that is worth 50k+. That leaves only dueling and if you have looked around nobody uses them to duel. There just simply is no market for them, other than people might buy one "just to have one" to stash in depths of their bank box.
Just because Hell's Halberd is expensive to craft and people ask 80k for one doesn't make it a good deal. Bad deals like that don't get much demand and if there is no demand your goods aren't selling. Smithing, as it is, is mostly useless. It can be a small source of income but you'll take a very long time to break even considering all the money and/or time you put into GMing it.
