Ok I think I figured it out, there are a total of 22 creatures that can be painted and in that quest you have to paint 4 of them which is randomly chosen. One of them doesn't seem to work though, Blood Elemental. So that's probably the one you got, bad luck is all.
I tried to fix it in the script for the next restart but if you do the quest again you will probably see all 4 creatures.
