If you want to train parrying faster, just stand in between 2 of them and attack both. You will gain parryihng alot faster this way as 2 will be attacking you at once and you will also be forced to heal more. That deals with problem 2 and 3.

If you want to attack one that isnt hitting you, find a dummy that is already fighting someone else, most of the time they wont bother with you and keep hitting the original target.
