You can tame anything and still gain skill , the diference is some animals need more tryes to tame so you have to chose an animal with low taming chance so you gonna try to tame it for a long time before tame it.
The best choice is mustangs.
Keep in mind 1 try in a stang is the same as 1 try in a chicken, the diference is you gonna need hours trying to tame a stang, with it more gains on an uniq animal.
On a chiken you gonna tame in the first try so you gonna need hundreds of chicken to have the same gain you got on a stang.
