A few questions...

Can anyone advise me what lore & knowledge skills are needed for pvp or crafts for that matter? .. I know anatomy is useful.. Do I really need to train any others?

Make sure to pick up Eval Int for this helps with magery. Need item ID if you loot an unidentified object and Arms lore if you want to know the durability of your items.

Is Arms lore needed for pvp? Does it affect the amount of damage you do? or just to look into weapons?

Only important lures for pvp are anatomy and evaluating intelligence.
Animal lore is probably the next most useful lure, just for taming and such.
Forensics is actually used for crafting skinned rugs and using taxidermy kits but thats about it, besides telling who killed what.
Arms lore will tell you weapon damage, speed and durability or defense and durability for armors.
ItemID does absolutely nothing. All items are identified when they drop.
TasteID is cooking related. It can tell you information about poisoned things mostly though.
